This recipe is the successful result of some recent experimenting in order to use more coconut flour in our own healthy baking endeavors. 

Of course, all of us “healthy bakers” know that coconut flour can be a little finicky, but once you figure it out – it’s smooth baking from there. These coconut flour muffins are the evidence of that. They’re a staple in our house now!

Can You Use Coconut Flour on Keto?

Coconut Flour is the perfect flour for a Keto diet. Low in carbs and high in fiber and protein, it’s an absolute yes!

Coconut Flour has 8g net carbs per 1/4 cup. Seems like a lot, but this is PLENTY of flour! (In this recipe, 1/4 cup + 1 tbsp of flour makes SIX coconut flour muffins).

Apart from the obviously impressive nutritional benefits of coconut flour, it is also about half the price of almond flour (in our neck of the woods). On top of that you use a relatively small amount per recipe. Win-win!

Can You Use Baking Powder On Keto?

Most baking powders bought it stores contain some sort of starch. Therefore, it is technically not Keto-friendly. Personally, if it’s all I have available, I’m not too concerned about it, because of the minuscule amount usually required in baking.

If you’re strict Keto, I suggest making your own baking powder. Keto Friendly Baking Powder is extremely easy to make. You need 3 ingredients in these ratios:

  1. 2/5 Baking Soda (1/2 cup)
  2. 2/5 Cream Of Tartar (1/2 cup)
  3. 1/5 Tapioca Starch (1/4 cup)

I’ve shown bulk measurements in brackets, but if you don’t bake often you can make as little as you need by using those ratios.

How To Make Coconut Flour Muffins:

My favorite part about this easy recipe, is just how quick it is to throw together! Trust me, you’ll be making these easy muffins all the time – starting today!

The Ingredients You Need:

  1. Coconut Flour
  2. Baking Powder
  3. A Pinch Of Salt
  4. Coconut Oil (we prefer to use refined odorless coconut oil in baking, to avoid that overly “coconutty” taste. If you only have organic coconut oil – of course, feel free to use it. Just keep in mind that the final product will have a stronger coconut taste in this case.)
  5. Honey
  6. Vanilla Essence
  7. Eggs

Step-By-Step Instructions:

  1. Preheat the oven to 180C/350F.
  2. Measure all the ingredients into a mixing bowl.
  3. Use a hand mixer to combine the ingredients until you have a smooth batter.
  4. Divide the batter evenly into 6 muffin liners.
  5. Bake for 15-17 minutes. The muffins are done when a knife or toothpick comes out clean when pressed into the center of the muffin.
  6. Allow to cook on a wire rack! Then, enjoy!

Once cooled, we store these coconut flour muffins in an airtight container, but they never last long!

Occasionally we enjoy frosting the muffins with our easy and delicious Keto Cream Cheese Frosting. Making it a to-die-for vanilla cupcake!

Ingredients

  • 1/4 cup + 1 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 cup coconut oil (refined/odorless)
  • 1/4 cup honey

Tips and Tricks:

 
  1. The muffins are done when a toothpick or knife tip comes out clean when pressed into the center on the muffins.
  2. Because of coconut flour is sometimes finicky with how it absorbs liquid:
    1. You can add one teaspoon of coconut flour at a time until it reaches the consistency shown in the video.
    2. If the batter is too thick, use a tablespoon of water at a time to loosen the mixture.
