Pizza. There’s just no getting rid of that darn pizza monkey on my back. Although we would certainly love to eat pizza every other night, it’s just not realistic.
We try to keep our real pizza consumption to the bare minimum. Thus, we’re left to get creative about how to eat those yummy pizza flavors without actually eating pizza.
So, without further ado – Pepperoni Cauliflower Pizza.
Even though this whole concept of cauliflower pizza is all over the internet at the moment, I was first introduced to it by my sister. She read about it in Professor Tim Noakes’ cookbook called Real Meal Revolution.
When she first read about it, we were so excited to try it, that we jumped in the car, drove to the mall and bought a food processor. Boy, was that a great decision.
The first time we made it though, we didn’t exactly jump for joy. We tweaked the recipe a little, remade it and then we liked it. I did some more tweaking, remade it and then loved it.
Cauliflower is without a doubt my current favorite vegetable. The possibilities are just endless – like making mash “potatoes” that tastes like the real deal (Cottage Pie with Cauliflower Mash) or a bechamel sauce (Very Veggie Lasagne with Cauliflower Bechamel). Now, a pizza!
If you live under a rock and somehow haven’t heard of this amazing discovery yet, let me explain. You are able to take a head of cauliflower, chop it up, mix some stuff with it, bake it and voilá – a pizza base. How amazing is that?!
Add some pizza sauce, Mozzarella cheese, pepperoni and a sprinkle of oregano and you have successfully disguised vegetables into a pretty darn convincing pizza. #Respect
